Intensive agriculture has depleted the soil of the most important minerals, such as magnesium. A biological tomato contains 200 mg of magnesium, while a "normal" tomato contains only 2 mg. The majority of the Spanish population has magnesium deficiency due to decreased consumption of legumes.
